  1. Prepare 3-4 cup vegetable stock
  2. Make ready 2 green chillies chopped
  3. Get 1 tsp ginger grated (thai ginger)
  4. Prepare 1 tsp lemon grass chopped (optional)
  5. Prepare 1 cup tofu cut into square piece
  6. Make ready 2 tbsp spring onion chopped
  7. Prepare 1 tsp soya sauce
  8. Prepare 1 cup sliced mushrooms
  9. Make ready to taste Salt
  10. Get 1 tsp black pepper powder
  11. Get 1/2 tsp lemon juice
  12. Get 1 tbsp garlic finely chopped
  13. Get 3 tbsp mix vegetable (carrot, beans cauliflower)
  14. Take 1 tbsp coriander leaves chopped
  15. Take 1 tbsp butter
Steps to make Healthy Soup:
  1. In big pan boiled vegetable stock add butter, mushrooms, garlic, ginger, vegetable, lemon grass, green chilli and tofu/paneer.
  2. Simmer till the vegetables are tender for five minutes.
  3. Add soya sauce, spring onion, black pepper powder and salt.
  4. Boil for a few more minutes. Adjust seasoning.
  5. Transfer in soup bowl and add lemon juice.
  6. Garnish with coriander leaves and serve hot.
